Seafood Night

Chris and I are huge fans of calamari so the other day when I spotted squid at the market, I snapped it up, thinking it would make for a fun dinner. Unfortunately, they were boxed and frozen at the time so it wasn't possible to give them a close examination.
It was only after I had defrosted the little guys that I realized that they still needed to be cleaned. So, the evening turned into dissection class 101 as I learned all about squid beaks (hard, like a bird's), the ink sac (don't pop it), and the proper way to remove squid skin (with a knife). It was quite interesting, actually. The calamari turned out pretty well too although next time I'm going to try using a lighter breading agent. And I'm going to buy them pre-cleaned.
